Peanut Butter Cup S'mores Cookies

Why stop at a peanut butter cup? Put one in a cookie for a treat that's as cute as it is tasty. The marshmallow adds a chewiness that will have you reminiscing of bonfires and campsites. This recipe was contributed by Justin’s.

Ingredients

  • 1 cup coconut sugar
  • 1 cup peanut butter, such as justin's peanut butter
  • 1 egg
  • 12 mini peanut butter cups, such as justin's
  • 6 large marshmallows, cut in half

Directions

  1. Preheat oven to 350 degrees.
  2. Combine sugar, Peanut Butter and egg in a medium bowl. Stir until well combined.
  3. Roll dough into 12-16 balls and place 2 inches apart on a cookie sheet. Bake 10-12 minutes.
  4. Remove from oven and place one marshmallow half on top of each cookie. press down. Put back in the oven for approximately 1 minute, or until marshmallows are toasted and golden brown. Remove.
  5. Place one peanut butter cup on top of each marshmallow and press down gently. Cool completely and enjoy!
