Coconut-Covered Brigadeiros

Ingredients

  • 1 14-ounce can sweetened condensed milk
  • butter, for rolling
  • shredded coconut, for rolling

Directions

  1. Pour the sweetened condensed milk into a small saucepan and place the pan over medium-high heat.
  2. Stirring constantly, cook the sweetened condensed milk until thickened. You’ll know it’s ready when you draw a line through the sweetened condensed milk and it takes a few seconds for the line to fill itself back in.
  3. Pour the cooked sweetened condensed milk into a wide, shallow dish (like a heat-proof baking dish) and allow it to cool.
  4. When the sweetened condensed milk has cooled, rub a small amount of butter on your hands and then roll the sweetened condensed milk into small balls. Roll each ball into shredded coconut.
  5. Refrigerate until ready to serve.
